Terroir et climat: | Placé en première côte sur la rive droite du Tarn, nous possédons un sol argilo-calcaire. Notre climat humide au printemps et chaud en été et automne nous vient d’une cohésion entre le climat océanique et méditerranéen. |
Vinification: | Une récolte mécanique soignée suivie d’un pressurage rapide à basse température donne sa couleur rose clair. Une bonne protection sous gaz inerte, permet une bonne conservation des arômes fruités et de sa couleur. Fermentation alcoolique lente à 16°C. Soutirage et mise en bouteille précoce afin de conserver tout son fruité. |
