Viticulture et rendement : | Vignoble en lutte raisonnée. Vigne âgée de 6 à 25 ans pour un rendement inférieur à 50 hl/ Ha. |
Terroir et climat : | Placé en première côte sur la rive droite du Tarn, nous possédons un sol argilo-calcaire. Notre climat humide au printemps et chaud en été et automne nous vient d’une cohésion entre le climat océanique et méditerranéen. |
Vinification : | Récolte manuelle soignée. Fermentation carbonique en grappe entière durant 5 jours à 30°C puis pressurage délicat et fin de fermentation à basse température. Soutirage puis mise en bouteille précoce. |
Conservation : | À consommer dans l’année. |
Caractéristiques analytiques : | Degré alcoolique : 12% vol. |
